Ingredients

  • 1 14.75 ounce can pink salmon drained
  • 1/2 red bell pepper diced
  • 1/2 small yellow onion diced
  • 10 squares saltine crackers crushed
  • 1 large egg
  • 1/2 Tablespoon Dijon mustard
  • 1 lemon use 1/2 of the lemon for juice and the other for garnish
  • 3 Tablespoons cooking oil for frying patties

Instructions

  1. One highly recommendation for this recipe is to prepare freshly ground pepper using a high quality pepper mill.

In a large bowl add salmon, red bell pepper, onion, egg, Dijon mustard, pepper and lemon juice and mix until well combined. Add crushed saltine crackers and stir until combined.

  2. Heat oil in nonstick skillet on medium/medium high. Form patties and gently place patties in hot oil and cook until bottom of patties become brown. Try to not disturb the patties while cooking or they may fall apart. You’ll be able to see the patties browning on the bottom outside edges.

  3. Once patties have browned on the bottom use a fish spatula and gently flip patties over and continue to cook until browned on the other side.

That’s it! How simple was that? Now remove patties from skillet serve and enjoy! These salmon patties make excellent leftovers served cold too.
