Ingredients

  • 1 pineapple cored
  • 6 ounce pineapple juice
  • 1/2 cup  cream of coconut (I use Coco Lopez)
  • 1 cup unsweetened coconut milk ice cubes (I use canned coconut milk and place in ice cube trays)
  • 2 cups ice cubes
  • maraschino cherry optional
  • Coconut Rum to taste optional
  • Party Straws optional

Instructions

  1. Note: if you are using more than one pineapple to serve your Pina Colada cocktails you may need to make two batches. If you are serving the drinks in hurricane glasses then one batch should be fine. But you can go ahead and make as many batches as you want. Wink Wink!

    Carefully slice the top off the pineapple. Using a pineapple corer, core the pineapple and set pineapple rings aside.

  2. Place 3 pineapple rings, pineapple juice, cream of coconut, coconut milk ice cubes, Rum (if using) and ice cubes in a blender or Vita mix and blend until smooth.

  3. Pour frozen drink in cored out pineapple’s, top with a maraschino cherry and sliced pineapple on the side, pop in a fancy party straw, kick back and enjoy!
