Italian Style Greens

Take your greens to a whole new level and give them a little dash of oomph with this easy recipe for Italian greens.

Ingredients

  • 2 Tablespoons olive oil
  • 1 medium yellow onion grated
  • 3 cloves garlic minced
  • 1/2 teaspoon crushed red peppers
  • 1 head escarole chopped
  • 2 cups fresh spinach or 1 bunch fresh spinach with stems removed
  • 1 bunch collard greens with stems removed and chopped
  • 1 cup chicken broth or vegetable broth for vegan/vegetarian style
  • 1/4 cup freshly grated parmesan cheese optional

Instructions

  1. Sauté onion in olive oil over medium heat for about 3 minutes or until onions become translucent. Stir in garlic and crushed red peppers. Continue cooking for about 1 minute.

  2. Add broth, escarole, fresh spinach and prepared collard greens to the pot and continue cooking over medium high heat bringing liquid to boil until greens begin to wilt. Turn heat to low and simmer greens for about 15 minutes or until all greens are tender.

    Transfer greens to a serving bowl. Sprinkle with fresh grated parmesan cheese and serve immediately.
