Sweet Jalapeno Cornbread

Add a little jalapeno flavor to a simple sweet white cheddar cornbread recipe. A new twist for any dish that serves cornbread as a side.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup butter melted
  • 1/2 cup creamed corn
  • 1 cup buttermilk
  • 2 large eggs at room temperature
  • 3 jalapenos (dice 2 and slice 1)
  • 1 cup freshly grated white cheddar cheese

Instructions

Prepare Dry Ingredients

  1. Preheat oven to 400 degrees Fahrenheight.

    In a medium bowl Combine cornmeal, flour, baking powder, baking soda, salt and sugar and set aside.

Combine Wet Ingredients

  1. In a large bowl combine eggs, buttermilk, creamed corn and melted butter. Then slowly add flour stirring to combine until all ingredients are moist.

Combine Remaining Ingredients

  1. Fold in diced jalapenos and cheddar cheese just until combined. Pour batter into a greased 8×8 pan and place sliced jalapenos on top of batter like so.

Bake

  1. Bake in preheated oven for 25 minutes or until a toothpick inserted into center of bread comes out clean. Serve with butter or honey butter and enjoy!
