Irish Mashed Potatoes aka Colcannon

Colcannon potatoes are an easy and tasty Irish dish generally made with russet potatoes, green cabbage, leeks and served with lots of butter.

Ingredients

  • 2 pounds russet potatoes peeled and sliced
  • cold water for boiling potatoes (making sure to cover with water at least on-inch over the potatoes)
  • 1 Tablespoon salt (use 1/2 Tablespoon to boil potatoes and 1/2 Tablespoon when mashing potatoes)
  • 1 leek sliced and rinsed well (use the white and light green parts)
  • 1 1/2 cups whole milk
  • 8 Tablespoons butter divided
  • 10 large leaves of green cabbage sliced and cut into squares

Instructions

  1. Prepare cabbage and leeks

    Place milk into a medium saucepan. Add sliced cabbage and leeks to milk and sauté over medium heat stirring occasionally until ingredients are soft. Do this while the preparing the potatoes.

  2. Prepare Potatoes

    Place potatoes into a large pot with salt and add water. Bring pot to a boil and cook until potatoes are fork tender. Drain water from potatoes. Do this by placing a colander in the sink and carefully pour hot water and potatoes into the colander. Pour drained potatoes back into the large pot. Mash potatoes with a wooden potato masher a few times. I say wooden potato masher because that’s what I normally use but mash’em however you do but don’t whip them.

  3. Combine Ingredients

    Next, add the sauteed cabbage and leek mixture along with the milk to the mashed potatoes and stir to combine. Place potatoes into a serving bowl. Make a divot in the center of the potatoes and place butter or Irish butter in the divot and allow butter to melt. Serve and enjoy!
