Avocado Semifreddo

Calling all avocado lovers! It's time to take the avocado to a different level with this Avocado Semifreddo Italian dessert made with caramelized pistachios.

Ingredients

  • 2 T butter
  • 1/2 Cup raw or roasted pistachios (chopped)
  • 3 T table sugar
  • 1 large avocado
  • 3/4 Cup sweetened condensed milk
  • 1 T lemon juice
  • 1 1/2 Cups heavy whipping cream

Instructions

  1. In a non-stick skillet, melt butter over medium heat.

  2. Add chopped nuts and sugar. Stir until sugar browns (about 5 minutes). Be very careful to not burn the sugar/nut mixture. 
  3. Remove from heat and let cool. Once cool the mixture will be crunchy and may stick together. That is fine. Just break it up when it calls for adding it to the ice cream mixture. 
  4. Spray loaf pan with non-stick cooking spray on all sides. Line pan with plastic wrap leaving about a 3" overhang or so on all sides. I also sprinkle a few pistachios on the bottom like so.

  5. Peel avocado and put into a blender or food processor. Discard the peel and seed. Add condensed milk and lemon juice. Blend until smooth and creamy. 
  6. In separate bowl beat heavy whipping cream until stiff peaks form. 
  7. Fold in avocado puree and nuts into the whipped cream.

  8. Pour into pan. Cover with plastic wrap overhang. Freeze for 4 - 6 hours.
