Breakfast Casserole

This is one of the easiest and best breakfast casseroles you will ever make.

Ingredients

  • 6 Tablespoons butter
  • 1 (12 ounce bag) frozen Potato O'Brien
  • 12 eggs
  • 16 ounces diced or cubed ham
  • 2 cups freshly grated sharp cheddar cheese
  • 1 cup milk
  • salt & pepper to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Melt butter in a 9×9 casserole dish. If making half portion I like to use this 1-Qt 9″ casserole dish. Pour entire bag of frozen potatoes over melted butter.

  3. In a large bowl mix together eggs, milk, ham and cheese. Then pour egg mixture over frozen potatoes. Gently pat down smooth, cover with aluminum foil and bake for 45 minutes. After baking remove foil and bake an additional 15 minutes or until center is set and edges are golden brown.
