My family's favorite pie is my homemade Sweet Potato Pie. They request it every year for family gatherings. Its easy to make and has only two spices in it.
Prepare Potatoes: Rinse potatoes and brush off excess dirt. Steam potatoes in a pressure cooker for 30 minutes. Let potatoes cool. Remove skins and drain off any excess water.
Prepare Filling: Preheat oven to 350 degrees Fahrenheit. In a medium bowl add sweet potatoes, eggs, butter, cinnamon, nutmeg and sugar until well blended. Slowly add evaporated milk to the pie filling and blend until it has a loose consistency. Pour into pie crust. (note: you may not use all the milk)
Topping: In a medium sauce pan add remaining evaporated milk, cinnamon and sugar. Stir until sugar dissolved. Using a pastry brush gently brush the mixture on top of the filling.
Bake: Place a crust shield over the pie to protect crust from over cooking or burning. Place pie pan on baking sheet and bake pie in preheated oven for 50 minutes. Remove crust shield and continue baking for 10 minutes. Remove pie from oven and cool completely on wire rack.
