Chicken Pot Pie

Here is a recipe for the easiest chicken pot pie that you will ever make. All you need to do is buy the ingredients and throw it together. Voila!

Ingredients

  • 1 whole cooked rotisserie chicken (deboned)
  • 1 cup peas and carrots (frozen)
  • 3 Tablespoons butter (salted)
  • 1 celery stock (chopped)
  • 1 medium Onion (chopped)
  • 1/2 teaspoon thyme (fresh or dried)
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 box refrigerated pie crusts (2 in a box)
  • 3/4 cup heavy whipping cream
  • 1 1/4 cups chicken broth

Instructions

  1. 1. Preheat oven to 425 degrees Fahrenheit.

  2. In a large skillet melt butter. Saute onion, celery, thyme and pepper for about 3-5 minutes. Add chicken. 
  3. In a sauce pan whisk together heavy whipping cream, chicken broth and flour. Cook over medium heat until mixture begins to thicken. Remove from heat and add to chicken mixture. Stir in peas and carrots.
  4. Let cool to 15-20 minutes.
  5. 5. Prepare 9-inch deep dish pie plate with one pie crust. Spoon cooled chicken mixture into the pie crust. Top with second pie crust. Seal edges and cut several slits in the top pie crust to allow steam to escape.

  6. Place pie plate on a baking sheet. Bake for 30 minutes or until top crust is light brown.
  7. Cool for 15-30 minutes before serving.
  8. Enjoy!

Homemade Tips:

  1. Homemade chicken broth: After chicken is deboned put carcass (all chicken bones) in a medium saucepan. Add water to cover bones and cook on low heat for at least 2 hours. This makes a fantastic all natural chicken broth. 

  2. Use fresh carrots: Peel and cut up 2 carrots. Simmer on medium heat for 10 minutes and drain. Then use 1/2 cup frozen peas.
