1. Preheat oven to 425 degrees Fahrenheit.
5. Prepare 9-inch deep dish pie plate with one pie crust. Spoon cooled chicken mixture into the pie crust. Top with second pie crust. Seal edges and cut several slits in the top pie crust to allow steam to escape.
Homemade chicken broth: After chicken is deboned put carcass (all chicken bones) in a medium saucepan. Add water to cover bones and cook on low heat for at least 2 hours. This makes a fantastic all natural chicken broth.
Use fresh carrots: Peel and cut up 2 carrots. Simmer on medium heat for 10 minutes and drain. Then use 1/2 cup frozen peas.
