Beef Stroganoff with noodles

Quick and Easy Beef Stroganoff

The perfect meal to fix during the week is this delicious beef stroganoff. It's easy to make and generally takes less than 45 minutes.

Ingredients

  • 2 pounds Ribeye steak
  • 1 pound slice mushrooms
  • 2 packets Lipton Onion Soup Mix
  • 2 cups beef stock
  • 16 ounces sour cream or 2 cups creme fraiche
  • 5 ounces chive and onion cream cheese
  • 1/2 cup heavy whipping cream
  • 12 ounces egg noodles
  • pepper to taste
  • Fresh parsley as garnish (optional)

Instructions

  1. Using a chef knife chop steak into bite size pieces.

  2. Place the meat in a large skillet and cook on medium heat until meat is fully cooked.
  3. Add mushrooms, onion soup mix, and 1 cup of beef stock to the steak and simmer over medium heat for about 15 - 20 minutes.

  4. In a separate pan cook noodles according to package instructions.
  5. In a medium bowl add sour cream, cream cheese and heavy whipping cream. Whisk to combine. Add to meat mixture and stir together. Continue cooking for about 5-7 minutes. If mixture looks too thick add the other cup of broth. 

  6. Dinner is ready!  Serve noodles in a bowl or plate and top with stroganoff sauce or combine noodles with stroganoff sauce and serve.  Either way you serve this dish it will be wonderful and satisfying.
