Homemade French Onion Soup Recipe; Excellent Flavor

Ingredients

  • 2 pounds yellow onions sliced
  • 4 Tablespoons unsalted butter
  • 1 Tablespoon all-purpose flour
  • 3 1/2 cups homemade beef stock
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 of a 1/4 cup dry sherry
  • 1 French baguette sliced (I use 2 slices per bowl)
  • 2 cups freshly grated cheese (Fontina, Swiss and Gruyere)

Instructions

  1. Grate Cheese:

    Grate cheese and set aside. Best to place in refrigerator until ready to use.

  2. Slice onions and cook:

    Hint: The best way to buy onions is in bulk. Then use a kitchen scale and weigh out 2 pounds. Having a kitchen scale is very handy in the kitchen. I use it ALL THE TIME!

    Slice onions in half between the root and the tip. Then make 1/4 inch cuts. Put sliced onion in a large stock pot along with butter.

    Cook onions on medium heat stirring occasionally until onions are caramelized with a nice golden color.

  3. Add other ingredients:

    Stir in flour until completely combined. Add homemade beef stock or beef stock, thyme, salt, pepper and sherry. Cook for about 10 minutes on medium heat.

  4. Prepare bowls:

    Using a soup ladle pour French onion soup into oven safe French Onion Soup Crocks filling about 2 inches from the top.

    Add 2 slices of toasted French baguettes or crostini's and generously sprinkle cheese over baguettes.

  5. Broil and serve:

    Place crocks on foil lined baking sheet and broil on medium until cheese has melted and slightly brown. Serve immediately and enjoy!
