Ingredients

  • 4 Tablespoons unsalted butter
  • 1 smoked ham hock
  • 1 medium onion chopped
  • 2 leeks chopped (use the white and pale green parts)
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1 pound dried split peas (rinsed and remove imperfections)
  • 8 cups chicken broth
  • 2 bay leaves
  • 2 green onions for garnish optional

Instructions

  1. In a large stock pot melt butter. Add ham hock and cook for abut 2-3 minutes. Add onions, leeks, shallots in with the ham hock and saute until tender.

  2. To the stock pot add chicken broth, rinsed split peas, salt, pepper and bay leaves.

  3. Bring mixture to boil. Reduce heat, cover and simmer for 1 hour stirring occasionally so the peas don’t get stuck on the bottom of the pan.

  4. After an hour check peas for tenderness. If they are still a bit crunchy cook for a little bit longer.

  5. Remove bay leaves and using a hand blender gently blend soup to consistency desired.

  6. Over low heat continue cooking soup for about 15 minutes longer.

  7. Remove ham hock and serve your split pea soup warm. You can remove the meat from the ham hock and serve with the soup if desired. Garnish if desired.

  8. Enjoy!
