Bolognese Sauce; The Best Recipe

Bolognese sauce, similar to chili mac, is a traditional Italian sauce loved by many. Suitable for the entire family! Serve over pasta of choice.

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 4 ounces pancetta cut into small pieces or 2-4 slices of bacon diced
  • 1/2 medium yellow onion diced
  • 3 medium carrots diced
  • 2 celery ribs diced
  • 2 Tablespoons unsalted butter
  • 3 ounces tomato paste
  • 1 cup whole milk
  • 5 sprigs fresh thyme
  • 2 fresh bay leaves
  • 32 ounces chicken stock
  • 1 28 ounce can whole tomatoes pureed
  • Salt & Pepper to taste
  • Freshly grated Parmesan cheese optional
  • Pasta of choice
  • Italian parsley as garnish optional

Instructions

  1. In a large skillet add butter, pancetta, carrots, onion and celery. Saute over medium high heat for about 5 minutes.

  2. In a stock pot cook ground beef and pork until browned. Drain grease from meat.

    KITCHEN TIP: To drain grease I like to put a strainer over a cereal bowl, pour meat into strainer and allow grease to drain. Then I discard the grease in a grease container.

  3. Pour cooked meat back into stock pot. Add cooked pancetta, carrots, onions, celery, tomato paste and 1 cup chicken stock stir to combine over medium heat for 1 minute.

  4. Using kitchen grade twine tie up thyme.

  5. Add thyme, bay leaves, blended tomatoes and the rest of the chicken stock into pot and bring to boil. Lower heat to simmer and add milk.

  6. Allow mixture to simmer slightly covered for about 3 hours. Serve over pasta of choice and enjoy!
