Strawberry Bavarian Cream Parfait Dessert Cups

A refreshing dessert is this homemade Strawberry Bavarian Cream Parfait. Fresh strawberries, creme anglaise and whipped cream make this dessert spectacular!

Ingredients

  • 1 cup fresh strawberries rinsed and hulled
  • 1/4 cup confectioners sugar
  • 2 egg yolks
  • 1/2 cup granulated sugar
  • 3/4 cup whole milk
  • 1 cup heavy whipping cream
  • 2 packages Knox gelatin
  • 1/4 + 2 Tablespoons water
  • 3-5 drops red food coloring optional
  • 2 large fresh strawberries sliced for garnish optional
  • mint sprigs for garnish optional
  • 1 cup heavy whipping cream +2 Tablespoons granulated sugar for topping optional
  • 1 cup strawberry jam optional

Instructions

  1. Make Strawberry Mixture: Prepare strawberries by rinsing and removing stems. Place strawberries in blender with confectioners sugar. Blend until smooth.

  2. Making The Creme Anglaise: Combine egg yolks and granulated sugar. Use a hand mixer and blend together until light and creamy (about 2-3 minutes).

    Place egg mixture into a sauce pan and add whole milk. Whisk ingredients together until smooth. Bring mixture to boil and remove from heat. Allow mixture to cool to room temperature. This combination of ingredients is known as “Creme Anglaise”.

  3. Prepare Gelatin: Place gelatin from both packets in a small bowl and add water. Stir to combine and set aside for about 5 minutes. During this time the gelatin will begin to thicken.

  4. Make Whipping Cream For Filling: Prepare whipping cream for Strawberry Bavarian Cream: Add 1 cup heavy whipping cream to a medium bowl. Using an electric hand mixer beat cream on medium speed until light peaks form. Place bowl in refrigerator until ready for use.

  5. Combine Ingredients: Take the cooled Creme Angaise and add the prepared gelatin. Using a whisk stir until smooth.

    Using a mixer spatula fold in whipping cream until completely combined. Although optional, but if the mixture is a yucky pinkish/brownish color this is the time to add 3-5 drops of red food coloring.

  6. Make Whipping Cream for Topping (Optional): Prepare whipping cream for topping (optional): Combine 1 cup heavy whipping cream and 2 Tablespoons sugar in a medium mixing bowl. Beat on medium to high speed with an electric hand mixer until stiff peaks form.

    To make a fancy topping place whipped cream in a disposable cake decorating bag along with a cake decorating tip.

    I recommend using this cake decorating tip for making the fancy swirl on top.

  7. Filling Parfait Dessert Cups: When preparing this dessert it’s best to use small containers. I used 9 ounce plastic parfait dessert cups similar to these which made 5 servings.

    I made a couple cups filled with Strawberry Bavarian and the others I got a little creative and made layers of Bavarian Cream and my homemade strawberry jam.

    Garnish with sliced strawberries, a twist of whipping cream and a mint sprig.

  8. Keep in refrigerator until ready to serve. Enjoy!
