Kombucha Scoby Fruit Chews

Maintaining a Kombucha SCOBY hotel can be cumbersome and unrewarding. So what do you do with extra SCOBY? Make Kombucha SCOBY Fruit Chews! Yields approx 30 fruit chews.

Ingredients

  • 1 pound SCOBY
  • 1 cup blended or pureed fruit I used 1/2 cup blended strawberry and 1/2 cup raspberry puree
  • 1/4 cup organic granulated sugar

Instructions

  1. To make flavoring blend fruit. Add sugar to fruit and set aside.

  2. Place SCOBY in blender on medium speed for about 3-4 minutes.

    Add blended or fruit puree and continue to blend until combined.

    Cut parchment paper to fit dehydrator drying racks.

    Pour 1 cup of SCOBY fruit mixture onto parchment paper on rack.

    Using an angled spatula spread the mixture out to all edges (about 1/4 inch thick).

    Do steps 1 through 5 until all trays filled.

  3. Dehydrate at 90 degrees Fahrenheit for 24 – 36 hours or until mixture is dry and no longer sticky.

    Remove from dehydrator and place parchment paper on cutting board.

  4. Cut 1-2 inch wide strips using pizza cutter or scissors across entire dried SCOBY fruit.  

  5. Leaving dried SCOBY on parchment paper roll SCOBY fruit up.

    Store in an airtight container.

    Remove SCOBY Fruit Chew from parchment paper prior to eating.
