Cherry Chip Nougat Cookies

Cherry Chip Nougat cookies are a buttery cherry pecan cookie that is baked to perfection and then covered with a mountaintop of cherry flavored powdered sugar.

Ingredients

  • 2 sticks unsalted butter at room temperature (or 1 cup unsalted butter)
  • 1 teaspoon  Grenadine Syrup
  • 1 1/2 cups powdered sugar (confectioners sugar) Use 1 cup for dough and 1/2 cup for dusting
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon red food coloring
  • 1 cup chopped pecans (chopped finely)
  • 1/2 cup sweet cherry chips
  • 1 teaspoon cherry flavored unsweetened drink mix (I used Kool-Aid)

Instructions

  1. Make Dough

    Cream butter and 1 cup of powdered sugar until creamy and fluffy. Beat in the grenadine syrup. Combine flour and salt in a large bowl. Slowly add flour mixture and red food coloring to the creamed butter and blend until smooth. Stir in pecans and sweet cherry chips thoroughly.

    Use a cookie scoop to scoop out dough and place on a cookie sheet covered with parchment paper (for easy cleanup). If dough is too sticky you can place in the refrigerator for approximately 5 minutes or less. After all dough has been scooped out hand roll balls until uniform in shape and smooth (if desired). Place rolled balls evenly on cookie sheet and refrigerate for about 15 minutes. Preheat oven to 350 degrees Fahrenheit.

  2. Bake

    After dough has chilled remove from refrigerator and bake in a preheated oven for about 10-12 minutes. Place the other 1/2 cup of powdered sugar in a bowl and add 1 teaspoon of cherry flavored unsweetened drink mix (Kool-Aid) and stir to combine. Remove cookies from oven and let them sit on the cookie sheet for about 5 minutes. Then roll warm cookies in the flavored powdered sugar and place on a cooling rack and allow to cool completely. For the final touches after the cookies have cooled I like to use a small fine mesh strainer filled with the flavored powdered sugar and sprinkle a fine dusting of sugar on top of all the cookies. This process coats the cookies evenly making them picture perfect.
