Avocado Semifreddo; Frozen Dessert

Surprise! It’s an Avocado Semifreddo!

If you love avocados you will really enjoy this avocado semifreddo. Even if you don’t like avocados you just might like this recipe.

With this dessert being light and creamy with just the right amount of sweetness and a nutty crunch one would never suspect the main ingredient would be an avocado.

What is an Avocado Semifreddo?

 An Avocado Semifreddo is a semi-frozen Italian dessert made with just one Avocado (well, there are other ingredients too. See below.). It’s consistency is between a gelato and ice cream. I think I will just call it an Avocado Jett-freddo!

Ingredients:

Directions:

  1. In a non-stick skillet, melt butter over medium heat.
  2. Add chopped nuts and sugar. Stir until sugar browns (about 5 minutes). Be very careful to not burn the sugar/nut mixture.
  3. Remove from heat and let cool. Once cooled the mixture will be crunchy and may stick together. That is fine. Just break it up when it calls for adding it to the ice cream mixture.Caramelized Pistachios
  4. Spray loaf pan with non-stick cooking spray on all sides.
  5. Line pan with plastic wrap leaving about a 3″ overhang or so on all sides. I also sprinkle a few pistachios on the bottom like so.
  6. Using this handy tool split, remove seed and slice the avocado and put into a blender or food processor. Discard the peel and the seed.
  7. Add condensed milk and lemon juice.
  8. Blend until smooth and creamy. 
  9. In a separate bowl beat heavy whipping cream until stiff peaks form.
  10. Fold in avocado puree and nuts into the whipped cream.
  11. Pour into pan.
  12. Cover with plastic wrap overhang.
  13. Freeze for 4 – 6 hours.

Ingredients

  • 3/4 Cup sweetened condensed milk
  • 1 T lemon juice
  • 1 1/2 Cups heavy whipping cream
