Jalapeno Spicy Corn Chowder

Ingredients

  • 4 Tablespoons butter
  • 1 medium yellow onion chopped
  • 1-2 jalapenos chopped with stems and seeds removed
  • 5 ears yellow corn removed from the cob
  • 1/4 teaspoon white pepper
  • 1 1/2 cups half and half
  • 1 Tablespoon all-purpose flour
  • 2 green onions chopped for garnish optional

Instructions

  1. In a medium sauce pan melt butter. Add chopped onions and white pepper to melted butter and sauté for about 2 minutes.

  2. Add corn, chopped jalapeno and 1 cup half-and-half to onion and butter.

  3. Finally, add flour to remaining half-and half and whisk until smooth then pour into the corn mixture.

  4. Bring mixture to a boil then reduce heat and simmer for about 15 minutes stirring occasionally. Serve immediately, sprinkle with green onions as garnish and enjoy!
