Yes, this spicy corn chowder recipe is super easy! Ingredients include five ears of fresh shucked corn-on-the-cob, a medium yellow onion chopped, one or two jalapenos, depending on your flavor preference, butter, flour, half-and-half and white pepper. And if you are looking to garnish your corn chowder just top with some sliced green onions.

This may not be your typical corn chowder recipe mainly because this recipe contains no meat or potatoes. We are meat eaters, don’t get me wrong, but sometimes I just like being able to enjoy the real taste of foods without all the added ingredients.

Shucking Corn

Shucking corn can be a mess with all the stringy corn silks therefore, it’s best to remove the outer leaves while standing over a trash can or the kitchen sink.

Grab the corn with your non-dominant hand with the tassel (also referred to as silks) facing up and begin peeling off the outer leaves by pulling down each layer with a firm tug. Once all the layers are pulled down snap them off and discard.

Remove any remaining silks by twirling the cob in your dominant hand.

I used to discard the corn silks and shucking’s into the trash but now I place them into my kitchen compost bin until time to transfer to the outside composter. One of these days I’ll have to tell you about my composting.

The best and safest way to removing corn from the cob is by using this handy kitchen gadget. It’s real easy to use. Just one quick stroke and all the kernels are off the cob! Boom! And you’re done. It’s especially handy when you are working with multiple cobs. Anyway, lets get to making this spicy corn chowder!

Jalapeno Spicy Corn Chowder

Ingredients needed to make a spicy corn chowder:

  • 4 Tablespoons butter
  • 1 medium yellow onion chopped
  • 1-2 jalapenos chopped (stem and seeds removed)
  • 5 ears yellow corn removed from the cob
  • 1/4 teaspoon white pepper
  • 1 1/2 cups half and half
  • 1 Tablespoon all-purpose flour
  • 2 green onions chopped for garnish (optional)

Spicy Corn Chowder Directions:

In a medium sauce pan melt butter and add chopped onions and white pepper to melted butter and sauté for about 2 minutes.

Add corn, chopped jalapeno and 1 cup half-and-half to onion and butter. Finally, add flour to remaining half-and-half and whisk until smooth then pour into the corn mixture.

Bring mixture to a boil then reduce heat and simmer for about 15 minutes stirring occasionally. Serve immediately, sprinkle with green onion as garnish and enjoy!
