Making a meal to include meat, salad and vegetables all under one hour may seem impossible. But it can be possible with this delicious cobb salad recipe.

And if you really wanted to make this salad in lesser time you could buy some precooked foods like the bacon and chicken tenders. I wouldn’t, but I’m just saying you could.

A One Paragraph History On The Cobb Salad

I once read somewhere the cobb salad was originated in California by a restaurant owner named Mr. Cobb. He was rummaging through the kitchen and just threw some leftover ingredients together like salad, onions, avocado, tomatoes and chives and served with French dressing. And that is a brief history on the cob salad.

Cobb Salad Dressings

Is a dressing really required for a cobb salad?

I think it is an individual preference. I have seen other recipe that serve their salad with red wine vinegar. As for me, I like to serve my cobb salad with a side of ranch dressing. I don’t pour the dressing on top of the salad but rather dunk my salad into the dressing. And sometimes I don’t use dressing at all. Reason so is I feel if you have a wide variety of ingredients on your salad then you wouldn’t always need a dressing. Call me crazy but just tasting the fresh ingredients is flavorful in itself and without the dressing you’re leaving all the extra calories behind.

Easy Cobb Salad Recipe

To make the best cobb salad it is mandatory to use all fresh ingredients. This recipe will make enough for two people and can easily be doubled.

Ingredients

  • 1/2 head iceberg lettuce chopped
  • 6 slices of bacon cooked and crumbled
  • 2 hard boiled eggs diced
  • 4 chicken tenders cooked and chopped into bite sized pieces
  • 1 small red onion chopped
  • 1/2 cup freshly grated cheese (I use Colby cheese)
  • 1 cucumber diced
  • cherry tomatoes sliced in halves
  • 1/2 avocado diced
  • juice from half a lemon (squeezed on the diced avocado to keep it from turning brown)
  • 1/4 cup blue cheese crumbles
  • desired dressing of choice (optional)

Directions

You could make this cobb salad in one big bowl but for the best presentation I recommend preparing each bowl separately. I like serving my cobb salad in pasta bowls like these.

Add a layer of lettuce to bowl and add toppings in sections. Serve and enjoy!
