This recipe calls for Korean beef short ribs and a Korean BBQ sauce that is sweetened by apples and pears. The sauce is a special Kalbi Marinade for ribs and can usually be located at Asian markets. If you don’t have access to an Asian market try getting the sauce here on Amazon. Maybe one of these days I will get around to making my own marinade but for now this is what I use.

What is Korean Short Ribs?

Korean short ribs is a beef cut that comes from the chuck end of the short ribs. It is a long, thin cut of meat that includes a thick layer of meat, bone and fat. The meat is marinated for a least a two hours then cooked on the BBQ grill until slightly charred. Real BBQ style eating! Korean short ribs are also known as Galbi or Kalbi.

Korean short ribs are a popular dish that can be found in street markets in Korea. At least that is what I was told by my husband who was told from a foreign exchange student that he housed many years back. Her American name was Ann. Thank you Ann for giving us inspiration to make this wonderful and tasty ethnic dish.

What side dishes do you serve with Korean Short Ribs?

I like to coordinate my side dishes to go with whatever meat I am serving. Below are a few ideas to serve with Korean Short Ribs:

Korean BBQ Short Ribs Recipe

Ingredients

  • 2 pounds Korean beef short ribs
  • 29.7 ounce Korean BBQ Kalbi Marinade for Ribs by CJ

Instructions

Place short ribs in a pan and cover with Korean BBQ Kalbi Marinade for Ribs. Cover pan with plastic wrap, place pan in refrigerator and allow to marinade for 2-hours. Note: Before pouring the entire bottle over the ribs I will keep out about 1/2 cup of the marinade and use for seasoning my side dishes like rice, noodles and/or spinach.

Remove beef ribs from marinade and cook or grill ribs over high heat at 400 degrees Fahrenheit until slightly charred on each side (about 3 to 4 minutes on each side). Discard remainder of the marinade.

Once the ribs are cooked to your liking remove from heat. Instead of serving the entire long strip of ribs we use kitchen shears and cut them meat into thirds.

Serve the ribs over a bed of Seasoned Oriental Vermicelli Noodles, with a side of Jasmine Rice and Korean Style Spinach and enjoy!
