Dare to try a different type of pasta? 100% Organic Black Soya Bean Fettuccine is definitely worth trying. It is much lower in carbohydrates than traditional pasta. It is high in protein, wheat free, Non-GMO, high in fiber, and it’s gluten free! Did I mention to say it is totally yummy!

I made this Black Soya Bean Fettuccine with a homemade creamy garlic white cannellini Alfredo sauce for my vegan daughters and they absolutely loved it! I am not vegan and I totally agree with the girls, it was delicious!

Amazingly enough this same brand also makes Organic Black Soya Bean Spaghetti, Organic Edamame Spaghetti, and if that doesn’t grab your cookies they even have Organic Edamame Fettuccine! What! Where does cookies come into this? I don’t know, I must be hungry for something sweet. LOL

What type of sauce do you use for Black Bean Fettuccine?

Usually when making a fettuccine pasta one would make an Alfredo sauce. Since I was preparing a vegan dish for my daughters the traditional Alfredo sauce would not be appropriate. Therefore, I made the most amazing creamy garlic white cannellini Alfredo sauce made with only white cannellini beans, garlic, unsweetened almond milk, a tad bit of olive oil and salt and fresh ground pepper! This sauce would also be perfect on the Organic Edamame Fettuccine. Of course, Alfredo sauce for Fettuccine Alfredo. Since the focus of this dish is plant based why not keep it that way and make the perfect creamy garlic white cannellini Alfredo sauce!

Just Black Pasta and White Sauce?

You could just make Black Soya Bean Fettuccine and creamy garlic white cannellini Alfredo sauce but why stop there? I do say this dish does need a little color therefore I made some zucchini spirals with this awesome vegetable spiral clutter, added some edamame beans, homemade dairy-free vegan Parmesan and garnished with fresh cut parsley. Just that little bit of color made this dish perfect!

Serve with vegan Parmesan and a Basil Pesto!

Black Bean Fettuccine with Creamy Garlic White Cannellini Sauce

Ingredients

Black Bean Pasta

  • 1 box Organic Black Soya Bean Fettuccine
  • 1 Zucchini spiral cut
  • 1 cup Frozen edamame beans thawed
  • 1 cup Vegan Parmesan
  • Basil Pesto optional

Creamy Garlic White Cannellini Sauce

  • 2 15 ounce cans Cannellini beans drained and rinsed
  • 3 cloves Garlic chopped
  • 2 Tablespoons Extra virgin olive oil
  • 1 cup Almond milk unsweetened
  • 1 bunch parsley chopped
  • salt & pepper to taste

Instructions

Black Bean Pasta

  1. Prepare bean pasta according to directions on package. Drain and place in large bowl. 

  2. Spiral cut zucchini, add to pasta and toss until combined.   

  3. Add edamame and cheese and toss. 

Creamy Garlic White Cannellini Sauce

  1. In a small sauce pan saute garlic in olive oil.  

  2. In a blender add beans, garlic, almond milk, salt and pepper. Blend on high speed until mixture is completely smooth. 

  3. Place sauce into a large pan. Cook, stirring occasionally until desired temperature reached. 

  4. Serve warm over pasta and garnish with parsley and additional Parmesan.

  5. Enjoy!
