What Type Of Carrots To Use For Making Glazed Carrots

Seriously there is not one particular type of carrot that should be used with this recipe. Since there are a wide variety of carrots to choose from maybe you’d like to experiment and try any of the versions below.

  • home grown carrots (my home grown carrots pictured below)
  • purple carrots
  • organic carrots
  • baby carrots
  • carnival blend carrots
  • store bought carrots
  • atomic red carrots (I planted these seeds in my garden for 2021 so I’ll be trying these in the fall)

What is the best shape carrot for making glazed carrots?

When making glazed carrots it is best to prepare medium to bite sized carrots. Carrots can be sliced in small spears, cut oblong or oval or if using baby carrots there is no need to cut the carrots at all.

Sometimes when I want to make a fancy cut carrot I like using this wavy crinkle cutter (works great for potatoes too). Other times I’ll just slice’em! But I do like slicing my carrots with an angle cut like the photo below. But whatever you do be sure to peel the carrots before slicing and discarding both ends.

Recipe For Glazed Carrots With Herbs

Ingredients:

  • 1 pound carrots (peeled and sliced)
  • 4 Tablespoons butter
  • 1/4 cup brown sugar
  • 2 sprigs fresh rosemary chopped
  • 2 springs fresh thyme chopped
  • water to boil/simmer carrots
  • chopped parsley optional

Directions:

Placed cut carrots in a medium pan and fill pan with water to cover carrots. Bring to a boil and then turn the heat to low and simmer carrots for 8-10 minutes or until carrots are just slightly fork tender. Do not allow carrots to get to soft or the dish will be mushy.

When carrots have reached desired tenderness drain water from carrots in sink using a colander. Toss carrots back into the pan and add butter, brown sugar and herbs and cook over medium heat for about 4-5 minutes stirring occasionally.

Place cooked glazed carrots in a serving bowl and sprinkle with chopped parsley. Enjoy!
