Get the flavor of native Jamaican cuisine with this Jerk Chicken recipe. It will tantalize your tastebuds and provide a slight Jamaican kick.

This chicken is made with homemade Jerk Seasoning and packed with Jamaican flavor. Although most Jerk Chicken is charbroiled over an open flame this recipe is baked in the oven resulting in more tender chicken pieces.

Is it necessary to marinade Jerk Chicken overnight?

Although some recipes suggest to marinade chicken overnight, this recipe does not. What is important for this recipe to obtain it’s Jamaican flavor is to score the chicken with shallow cuts and then sprinkle the seasoning into the scored cuts which will allow the flavors to penetrate the meat leaving a more flavorful chicken.

Jamaican Jerk Chicken Recipe

This Jerk Chicken recipe is oven baked and will be tender enough that it will easily fall off the bone when ready to serve.

Ingredients:

  • 1 whole chicken
  • 2 Tablespoons olive oil
  • 1/3 cup Jamaican Jerk Seasoning (if you’re making the Jerk Rice too then hold back 1 Tablespoon of seasoning for the rice recipe)

Jerk Seasoning Recipe (this makes 1/3 cup) – combine all seasonings together

  • 1 Tablespoon onion powder
  • 1 Tablespoon garlic powder
  • 2 teaspoons cayenne pepper
  • 1 teaspoon ground allspice
  • 1/2 teaspoon Chile red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon dried thyme leaves
  • 1 Tablespoon dried parsley flakes

Instructions for Making Jamaican Jerk Chicken:

Prepare Chicken

Carefully cut whole chicken into twelve pieces (2 legs, 2 thighs, 4 breasts, 2 drumettes, and 2 wingettes). Then score each piece of chicken about 1/3-inch deep, preferably under the skin, with at least three cuts and set aside.

Prepare Pan

Line a 9×13 baking pan with heavy duty aluminum foil. Pour olive oil on top of foil and tilt back and forth until oil covers bottom of pan. Preheat oven to 450 degrees Fahrenheit.

Season Chicken

Pull back the skin and sprinkle the homemade Jerk Seasoning in-between scored cuts, cover with skin and then coat both sides of all chicken pieces and place in prepared pan. If you’re not into making the Jerk Seasoning you can always buy it on-line here.

Bake

Cover prepared pan tightly with heavy duty aluminum foil and bake for 1 hour. Remove foil and continue to bake an additional 30 minutes or until desired char on chicken. Serve with Jamaican Jerk Rice and Peas and Enjoy!
