Loving Pumpkin Spice

Every year starting September through November I get this craving for pumpkin spice sourdough waffles. Well, actually pumpkin spice everything. Pumpkin spice latte, pumpkin spice bread with pumpkin butter, pumpkin, pumpkin, pumpkin. I can’t ever seem to get enough.  This recipe can also be used to make pancakes.

To top that off I have a recipe for pumpkin spice syrup. This syrup is a-ma-zing! Another reason it is amazing is because one to two tablespoons of this sweet pumpkin spice syrup can be added to make pumpkin spice coffee, pumpkin spice lattes, even pumpkin spice almond milk. Anything you want to pumpkin spice up you can!  We will get into more about the syrup but for now, this page includes the recipe to make pumpkin spice waffles/pancakes.

This recipe requires sourdough starter. That’s great if you have some. If you don’t you will need to get some.

That’s great! Just follow the recipe below to make your own pumpkin spice sourdough waffles.

The recipe below will make about 6 waffles. Double recipe for 10-15 waffles.

Recipe for Pumpkin Spice Sourdough Waffles

Overnight Sponge Ingredients:

Waffle Batter Ingredients:

  • Take the overnight sponge
  • 1 egg
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 2 Tablespoons melted butter
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ cup Belgian Pearl Sugar (Optional special ingredient)
  • Nuts (optional)

Directions:

Making the Sponge:

  1. In a large glass mixing bowl add flour, sugar, milk, and pumpkin puree.  
  2. Add sourdough starter and mix all together.
  3. Cover and let rest on the counter overnight at room temperature.

Your batter should look like this in the morning. Full of bubbles.

Making the batter:

  1. Melt butter.
  2. Beat egg in a small bowl. Add butter and salt.
  3. Combine egg mixture to the overnight sponge.
  4. Add baking soda, spices and the secret ingredient, Belgian Pearl Sugar.
  5. Pour batter onto your preheated, greased waffle iron (add nuts if desired) and bake according to the manufacturer’s instructions.
  6. Serve waffles immediately to ensure crispness.
