This recipe calls for ground beef, ground pork, a few oats, chopped onion, pepper flakes, eggs, seasonings and half and half. Boy, it sure is good!

This meatloaf is so good as a hot meal and any leftovers can be served cold as a sandwich. Even better yet!

Directions:

Preheat oven to 400 degrees Fahrenheight.

Place all ingredients in a large bowl and mix by hand until thoroughly combined.

Shape mixture evenly into a 9×5 loaf pan. For years I have used a stone loaf pan for making meatloaf.

Bake for 1 hour or until center of loaf temperature reaches 165 degrees Fahrenheight. If the meatloaf gets too hot it will tend to be dry.

The best way for checking the temperature is by using an instant read thermometer. Just poke the thermometer into the middle of the meatloaf about halfway down into the center to get a true reading.

Once the meat has reached temperature remove from oven.

If desired apply a layer of ketchup to the top of the meatloaf and cook for an additional 10 minutes.

I personally don’t care for ketchup on my meatloaf but my husband does, so I apply ketchup to only half the meatloaf. It’s a win-win situation.

Remove loaf pan from oven and allow to rest for 15 minutes prior to cutting. By doing so this will allow the juices to redistribute evenly.

Slice to desired thickness and enjoy!
