Sourdough Waffles

Jett’s sourdough waffles can be served any time of the day.

This recipe requires sourdough starter. That’s great if you have some. If you don’t you will need to get some.

Have a Starter?

That’s great! Just follow the recipe below to make your own sweet sourdough waffles.

 

The recipe below will make about 4 ½ waffles Belgian style. Double recipe for 8-10 waffles.

Overnight Sponge Ingredients:

  • 1 cup All-purpose flour
  • One Tablespoon granulated sugar
  • 1 cup milk + 1 Tablespoon lemon juice (or 1 cup buttermilk)
  • 1 cup sourdough starter (unfed)

 

Waffle Batter Ingredients:

  • Take the overnight sponge
  • 1 egg
  • 2 Tablespoons melted butter
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup Belgian Pearl Sugar (Special Ingredient)
  • 2 Tablespoons Unsweetened cocoa powder (optional)
  • Nuts (optional)

 

Directions:

Making the Sponge:
  1. In a large glass mixing bowl add flour, sugar and buttermilk. If  you don’t have buttermilk on hand you can  make your own (see step 2).  
  2. In a small bowl combine 1 C milk and 1 Tablespoon lemon juice and stir. Add to flour mixture.
  3. Add 1/2 cup sourdough starter and mix all together.
  4. Cover and let rest on the counter overnight at room temperature.

 

Your batter should look like this in the morning. Full of bubbles.  

Sourdough waffle batter

Making the batter:
  1. Melt butter.
  2. Beat egg in a small bowl. Add butter and salt.
  3. Combine egg mixture to the overnight sponge.
  4. Add baking soda and the secret ingredient, Belgian Pearl Sugar.
  5.  For chocolate waffles add cocoa powder to 2 cups of the batter. (This will make 2 chocolate waffles). 
  6. Pour batter onto your preheated, greased waffle iron (add nuts if desired) and bake according to the manufacturer’s instructions.
  7. Serve waffles immediately to ensure crispness.
