Dairy free cheese recipes are popping up everywhere. They have become a very popular alternative to dairy and they taste surprisingly good.

Sometimes I really like eating my homemade dairy free parmesan cheese all by itself. You know, sprinkle a little in the palm of your hand and taste it! Whether you lick your finger and dip it in or boldly stick your tongue in directly, it tastes wonderful!

This recipe calls for Nutritional Yeastwhich adds that fantastic cheesy flavor, raw cashews, garlic powder and some kosher salt.

Nutritional Yeast

Nutritional Yeast

Nutritional Yeast or “nooch” is a non-activated form of yeast. It is different than most-traditional yeasts that are usually used to make breads as it is cultured on the surface of molasses. No, it’s not sweet nor does it contain sugar.

Nutritional yeast can be found in the form of powder or yellow flakes like the above photo. It has a nutty, cheesy flavor making it a perfect addition to this dairy free parmesan cheese recipe.

Nutritional yeast is gluten-free, sugar-free, low in fat, and high in protein. It contains zinc, folic acid, and B Vitamins including Vitamin B12.

Nutritional yeast can be used in recipes like this one here or sprinkled over veggies, pasta, pizza’s, baked potatoes and I even hear it is phenomenal on popcorn.

Cashews

Raw Cashews

This recipe calls for raw cashews. Why raw? Since we will be blending the cashews we want to achieve a powdery consistency. While roasted cashews are generally made with oil and when blended they may tend to clump together leaving a lumpy consistency. Plus, being raw means there are no added ingredients.

Raw cashews are traditionally used for this recipe. Although I have not tried but I have heard others using nuts such as Brazil nuts, macadamia, walnuts, almonds or almond flour. And those with tree nut allergies have used the nutritional yeast with hemp seeds, pumpkin or sunflower seeds.

  1. Add all ingredients into a food processor and pulse until blended very fine.
  2. Store in a glass container with a lid like this one in the refrigerator. It will keep several months.

Dairy Free Parmesan Cheese

This Dairy Free Parmesan Cheese is made with raw nuts, nutritional yeast and two other ingredients.  Sprinkle on veggies, pasta, pizza's, baked potatoes, popcorn and so much more.   Makes about 1 cup.

  • 1/4 teaspoon garlic powder
