Shrimp lovers delight! Make this Shrimp Scampi Garlic Toast recipe as an appetizer or a meal. Either way this recipe is sure to please.

Shrimp in a garlicky butter sauce is a classic shrimp scampi dish which is usually served with slices of toasted garlic bread. Is your mouth watering yet? Well, this recipe prepares the shrimp in a buttery garlicky mixture and places atop a French bread and then toasted to perfection. Yummy!

Let’s Talk Shrimp

Buying shrimp can be confusing. You’ll see some shrimp labeled as 16/20 or 51/60p. So which one do you buy? Below is a helpful way to determine which shrimp might just be best for you:

  • 2/4 means you get 2-4 shrimp per pound shell-on deveined. This size shrimp are sometimes hard to find but may be found at your local grocery store in the frozen seafood section. 1-2 pieces of this 2/4 would be one serving. I believe this one is the extra colossal.
  • 4/6 Jumbo Shrimp Raw shell-on deveined. This shrimp may be very similar to the super colossal with 2-3 shrimp per 3 oz serving.
  • 8/12 Colossal Shrimp. Actually, from research, shrimp less than 15/xx is considered Colossal. 3-4 shrimp per 3 oz serving. See my Colossal Shrimp recipe here.
  • 16/20 Extra Jumbo Shrimp. This size shrimp is great for making shrimp cocktail or even this recipe. 4-5 shrimp per 3 oz serving.
  • 21/25 Jumbo Shrimp. 5-6 shrimp per 3 oz serving.
  • 26/30 Extra Large Shrimp. This shrimp size is usually 6-7 shrimp per 3 oz serving.
  • 31/40 Large sized shrimp are good for making shrimp scampi on the Barbie. 8-9 shrimp per 3 oz serving.
  • 41/50 is considered medium sized shrimp. 10-12 shrimp per 3 oz serving.
  • 51/60 are small shrimps. 12-15 shrimp per 3 oz serving.
  • 61/70 are the tiny Shrimps which are really only good for salads or other small appetizers. 15-17 shrimp per 3 oz serving.

Frozen Shrimp vs. Fresh Shrimp

Most times all shrimp has more than likely been frozen at some point unless it’s purchased directly fresh from the shrimp boats. For example, I purchased head on shrimp at Costco the other day and it looked fresh but the packaging said it was previously frozen. No biggie, it just meant I needed to use it up faster than if it was still frozen. Anyway, if buying frozen shrimp it’s super easy to thaw out. Just place the frozen shrimp in a bowl with tap water and allow to rest for about 7-10 minutes to completely thaw.

How to Devein Head on Shrimp

Take the whole shrimp in your non-dominate hand. Place the shrimp on a cutting board. Remove the head at the first joint by cutting with a knife. Then toss the head in a bowl. Carefully remove shrimp shelling from the body of the shrimp and place the shell in the bowl with the shrimp head. Lightly run a knife on the back side of the shrimp body clear to the tail just to expose the vein. Spread the meat apart and gently remove the vein and discard. Either save the shrimp heads and shells for making my Shrimp Stock or completely discard.

Shrimp Scampi Garlic Toast Recipe

Ingredients

  • 1/2 loaf French bread cut in half
  • 6 large Shrimp deveined with shells removed
  • 5 Tablespoons butter
  • 3 large cloves garlic minced
  • 2 green onion tops chopped
  • 1/4 teaspoon freshly ground black pepper
  • 1 Tablespoon mayonnaise ( I use Hellman’s)

Instructions

Prepare Shrimp

Place deveined shrimp in a food chopper. I like using this nifty hand-powered pull chopper for making this recipe. I have to be honest. My husband got this for me as a gift and I have to say I was very skeptical. But, I have used this kitchen gadget for chopping many ingredients and absolutely love it! Anyway, I pull the handle about six times just enough to chop the shrimp up. Do not puree it just chop it up some. Or you can use a knife to chop the shrimp into small pieces.

Prepare Other Ingredients

Place butter in a small sauce pan and melt butter. Add minced garlic and cook over medium heat for about one minute. Remove from heat and add mayonnaise and then pour chopped shrimp into the butter mixture. Then add pepper and chopped green onions and stir until well combined.

Prepare French Bread

Place French bread cut side down (with the crust part facing up) on baking pan. Broil for about 1 minute on second shelf of oven or until the crusty side gets somewhat toasted. Then carefully remove pan from oven. Allow bread to slightly cool. Divide the shrimp and garlic butter mixture in half and carefully pick up one half of the toasted French bread and slather half the shrimp mixture on top evenly. Then put the remaining shrimp mixture on the other half of the French bread.

Broil French Bread

Place both halves of the French bread covered with the garlic shrimp mixture back on the baking pan. Place the pan in the oven and broil for at least three minutes or until shrimp is fully cooked and bread starts to toast.

Cut and Serve

Carefully slice the Shrimp Scampi Garlic Toast using a bread knife into individual pieces and place on a serving tray. This recipe makes for great hors d’oeuvre (appetizer) for six or you could also make this as a main meal for two. Either way, this dish will definitely be a recipe everyone will want.
