Every summer I look forward to making this rotisserie chicken salad recipe. For one thing it is one of my husband’s favorites and another I don’t have to make the chicken. Nope! Call me lazy but for this recipe I buy it precooked!

Rotisserie Chicken Salad Recipe

I came up with this recipe because every summer, before I even started making this recipe, my husband would head to one of our local fast food chains that served chicken salad sandwiches. He never had the luck of getting the sandwich because when he went it was either to early in the season and they had not yet started serving this sandwich or he was too late and they quit serving this sandwich for the season. He would be so bummed!

Since it was very seldom he was able to get this sandwich he loved so much at the local fast food chain I decided I would create my own recipe, especially for him! Sometimes a girl has to do what a girl has to do! Don’t you agree?

Hours In The Kitchen? NOT!

Instead of spending a lot of time in the kitchen cooking up a chicken for several hours, because that is how I like making my chicken especially when making chicken noodle soup, I decided to get one of the rotisserie chickens at the store. That way I could have this rotisserie chicken salad ready in a jiffy!

Don’t get me wrong because I do like making my own rotisserie chicken using my Power AirFryer but sometimes I don’t have time to cook and I take the easy route. I’m sure you can relate. I also like using the airfryer for its dehydrator capability for making my delicious tomato chips. Anyway, back to the reason you dropped by, The Rotisserie Chicken Salad.

Choose a rotisserie chicken that looks moist and flavorful.

Ingredients:

  • Any size whole cooked rotisserie chicken (deboned)
  • 2 celery ribs/stalks (sliced)
  • 1 cup Hellman’s Mayonnaise
  • 1 cup red seedless grapes (halved or quartered)
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • Serve on a bed of lettuce, bread of choice or croissants

Instructions:

Combine all ingredients in a large bowl and stir until well combined. Serve on a bed of lettuce, bread of choice or even croissants for that matter. That’s it! Enjoy!

Refrigerate any leftovers in an airtight container. Serve within 2-3 days.
