Which Cut of Corned Beef to Buy

You will find that there are two different cuts of corned beef brisket available in cryovac packaging in the meat department of your local grocer. The Flat Cut and the Point Cut.

The Flat Cut is a leaner cut and the Point Cut is usually well marbled. I have tried both cuts and prefer the Point Cut because I feel it gives more flavor to my meals.

Ingredients

  • 3 pounds corned beef cooked and cooled
  • mustard (I use regular mustard)
  • Swiss cheese slices deli style
  • rye swirl bread (I use Pepperidge Farm Rye & Pumpernickel Deli Swirl)

Cook Corned Beef

Cook corned beef in a slow cooker for at least 5 hours and then cooled completely. It’s best to refrigerate for at least 2 hours.  See how to cook corned beef here. If the corned beef is already cooked this recipe should take 45 minutes or less to make.

Slicing The Cooked Corned Beef

To get that piled high sliced corned beef we use a quality tabletop slicer.

Depending on the desired thickness the slicer has a simple dial that gives you complete control over the cuts thickness, with 15 options from the thinnest slices to 9/16″ cuts.

Before we got our meat slicer we previously used a cheaper brand that just did not, as one may say, “cut the mustard”!

If you have been wanting a quality meat slicer I highly recommend spending the extra money on getting one that will get the job.

We have found this Globe slicer meets our needs. The holding tray slides smooth making even cuts, the motor is quiet. It holds a good size amount of meat, has quality parts, and a built in sharpener. See the full spec sheet below for all standard features.

Steam Sliced Meat

Place sliced meat in a fry pan or skillet over medium heat. Cook meat until warmed.

While the meat is still in the fry pan or skillet add a slice of swiss cheese and cover with a melting dome until cheese is melted to desired texture.

Building The Corned Beef Sandwiches

Slightly toast bread.

Slather toasted bread with mustard. I just use regular mustard but use any type of mustard if you wish.

Using a spatula gently remove corned beef from fry pan or skillet and gently slide it on top of the mustard.

Add the other slice of bread on top. Slice bread using a bread knife.

Serve with potato chips and a sliced dill pickle.

Enjoy!
