Easy Sweet Vinegar Cucumber Salad Recipe

A Favorite Summer Salad

One of my most favorite summer salads of all time is this sweet vinegar cucumber salad.

The ingredients include fresh sliced garden cucumbers, white onions, tomatoes, water, vinegar, sugar and black pepper. To get an even slice I highly recommend using this vegetable slicer. I have this exact slicer and love it! It’s durable and has non-slip rubber feet for a safe and stable experience. I like how easy it is to use, just dial the thickness desired and gently slide the cucumber and onion across the blade and viola! A perfect cut every time.

Talking about safe, anytime using this slicer or any slicer at all I highly recommend wearing a cut resistant glove. It will protect your hand and fingers.

And for cutting tomatoes I like using a slicer like this. For one thing it’s easy to find in the drawer, it’s especially for cutting tomatoes and it doesn’t cost an arm and a leg! Oh, and I love the fact it has a case for storing.

Farm Fresh Cucumbers

Cucumbers do not make the cut in my garden so when I have friends that offer me garden fresh cucumbers I definitely won’t turn them down.

Some of the recipes that contain cucumbers include Salad Kabobs, Chickpea Vegetable Salad, You would think since I love gardening that cucumbers would be on my list of things I plant. But nooo!

What I do like about cucumbers is the way they smell and the benefits they offer.

Benefits of Cucumbers

Cucumbers have many benefits but just to name a few they contain antioxidants to help aid in eliminating toxins from the body. They provide hydration and may aid in weight loss.

Did you know cucumbers aka cukes, are also good for your skin’s health and appearance? Cukes provide a cooling effect thus decreases swelling and reduces the appearance of puffy eyes. Yes, it’s true. Those little rounds of cukes placed over the eye socket acts like little ice packs to relieve puffy lids.

Cucumbers have been used for many years in beauty products since the antioxidants are also known to slow down premature aging and improve elasticity. Matter of fact, there are homemade facial masks that call for half a cucumber mashed with a couple Tablespoons of yogurt and while applied to the face will help exfoliate and hydrate the skin.

If you’re not into doing the facial thing and want to improve your skin appearance then try adding a few drops of cucumber seed oil to your moisturizer each morning and apply to your face and neck. It’s good for all skin types and it will help keep your skin healthy. Oh yeah, it’s great for hair and nails too!

Sweet Vinegar Cucumber Salad With Onions and Tomatoes

Ingredients:

  • 1 – 2 large cucumbers
  • 1 medium white onion
  • 10 cherry tomatoes (or more)
  • 1 cup white vinegar
  • 2 cups water
  • 1/2 cup granulated sugar
  • 1 Tablespoon black pepper

Instructions:

Clean all vegetables prior to cutting to avoid any harmful bacteria getting into your recipe. I like using this all natural cleaner.

While wearing a pair of cut resistant gloves carefully set blade on vegetable slicer to desired thickness and begin slicing cucumbers and onions. Hand cut cherry tomatoes in halves.

Combine remaining ingredients in a medium bowl. Stir until sugar dissolved. Place all cut vegetables in the bowl with the sweet vinegar liquid and allow to marinade in the refrigerator for at least 6 hours. Serve cold. Enjoy!
