Old-Fashioned Cloverleaf Dinner Rolls

No-Fail Cloverleaf Dinner Rolls

This is my most successful no-fail recipe for dinner rolls. Whatever way I prepare the rolls be it standard roll or my favorite cloverleaf dinner rolls I know they will be good. These rolls are yeasty, light and buttery. My best rolls yet!

This recipe is being shared as the cloverleaf dinner roll but can actually be used for regular dinner rolls if preferred.

Ingredients:

  • 2 large eggs
  • 1/3 cup sugar
  • 2 teaspoons salt
  • 6 Tablespoons softened butter (unsalted)
  • 1 cup mashed potatoes unseasoned (1 medium baking potato should yield 1 cup)
  • 3/4 cup lukewarm water (potato water works well)
  • 4 1/4 cups All-Purpose Flour (unbleached)
  • 2 1/2 teaspoons instant yeast or active dry yeast
  • Butter to apply to roll tops after baked (optional)

Directions:

Mix and knead all the ingredients together by hand, mixer or bread machine making a smooth soft dough.

Place dough in a lightly greased bowl, cover bowl with plastic, and let the dough rise until its doubled in size (about 90 minutes). If you are using a bread machine, let the machine complete its cycle, then leave the dough in the machine to rise.  

Set dough aside to rise

When your dough has doubled in size it should look similar to the picture below.

Making Cloverleaf Dough

Gently deflate the dough and divide it into 4 pieces (see diagram below).

Take each fourth and divide that into fours making a total of 16 cuts (see diagram above).

Now take one of the cuts and pull apart to make three small balls. Do this for every cut.

Place 3 small balls of dough into a lightly greased cupcake pan like so

Cover pan with lightly greased plastic wrap and let the dough rise for 1 1/2 to 2 hours in a warm draft free location, until they are quite puffy.

Preheat oven to 350 degrees Fahrenheit.

Bake rolls for 20-25 minutes, until they are golden brown and feel set. Remove from oven and turn out onto a cooling rack. Brush with melted butter, if desired.

Serve rolls warm or at room temperature. Store rolls wrapped in plastic for several days at room temperature. Freezing rolls will provide longer storage.
