Sausage Egg Hash Brown Breakfast Casserole

Easy sausage egg breakfast casserole. Ingredients include: pork sausage, 6 eggs, hash brown potatoes O’Brien, sour cream, milk, cheese, butter and spices.

This is one of those breakfast casserole that can be made ahead the night before, place in the refrigerator and just pop it in the oven the next morning.

What I like most about this recipe is the added flavor by using potatoes O’Brien and not having to chop additional ingredients because it’s already in the bag! Another perk, 6 eggs opposed to 12 eggs when compared to other recipes.

Sausage Egg Hash Brown Breakfast Casserole Recipe

Ingredients:

  • 1 pound mild ground pork sausage
  • 4 Tablespoons butter melted
  • 3 cups potatoes O’Brien
  • 6 eggs
  • 1 Tablespoon sour cream
  • 1/2 cup whole milk
  • 3/4 cup freshly grated cheddar cheese
  • 1/4 teaspoon ground mustard
  • Salt and Pepper to taste

Directions:

Preheat oven to 350 degrees Fahrenheight. Melt butter in a 8×8 baking dish.

Place ground pork in a fry pan and cook over medium until meat is nicely browned. I like using a meat chopper like this to break up the pork. Drain grease from meat and set aside.

In a mixing bowl combine eggs, milk, sour cream, and ground mustard. Whisk until combined. Stir in cheese and set aside.

Add potatoes O’Brien to 8×8 baking dish with melted butter. Add browned sausage and pour egg mixture over all ingredients.

Cover with aluminum foil and bake for 50 minutes. Remove foil and bake and additional 10 minutes. Remove from oven and allow to cool for about 5 minutes before serving. Enjoy!
