Easy Recipe for Homemade Pico de Gallo

Pico de Gallo is a combination of fresh vegetables topped with a splash of lime. It is usually served as an opening appetizer when eating mexican food in which is served with tortilla corn chips.

The ingredients for pico de gallo are very simple. Fresh tomatoes, red onion, a couple jalapenos, cilantro and lime juice.

Making Pico de Gallo

This recipe uses 10 firm Roma tomatoes. Slice the tomatoes in half and deseed by using a spoon to gently remove seeds and discard.

Place tomatoes cut side down and slice into strips then make cross cuts making diced shape tomatoes and place in a large bowl.

Dice up one medium to large sized red onion and add to tomatoes.

Depending on how much spice you like this recipe calls for 2 jalapenos but feel free to add three or four if desired. Slice jalapenos in half and remove seeds with a spoon. Cut the jalapenos the same way you cut the tomatoes and add to the onions and tomatoes.

Finally, chop cilantro leaves (I love this kitchen tool to chop herbs) and add to the rest of the chopped vegetables. Stir all ingredients together until well combined.

Slice lime in half and squeeze over the chopped vegetables. Stir in 1 teaspoon salt. Serve with tortilla chips and enjoy!
