Get the flavor of native Jamaican cuisine with this Jerk Chicken recipe. It will tantalize your tastebuds and provide a slight Jamaican kick.
Prepare Chicken
Carefully cut whole chicken into twelve pieces (2 legs, 2 thighs, 4 breasts, 2 drumettes, and 2 wingettes). Then score each piece of chicken about 1/3-inch deep, preferably under the skin, with at least three cuts and set aside.
Prepare Pan
Line a 9×13 baking pan with heavy duty aluminum foil. Pour olive oil on top of foil and tilt back and forth until oil covers bottom of pan. Preheat oven to 450 degrees Fahrenheit.
Season Chicken
Pull back the skin and sprinkle the homemade Jerk Seasoning in-between scored cuts, cover with skin and then coat both sides of all chicken pieces and place in prepared pan. If you're not into making the Jerk Seasoning you can always buy it on-line here.
Bake
Cover prepared pan tightly with heavy duty aluminum foil and bake for 1 hour. Remove foil and continue to bake an additional 30 minutes or until desired char on chicken. Serve with Jamaican Jerk Rice and Peas and Enjoy!
