Homemade Spring Rolls With Peanut Sauce

Spring Rolls with Peanut Sauce

When I think of Spring Rolls I think of the colorful transparent wrap filled with an array of fresh vegetables and herbs. Makes my mouth water just thinking about it.

What’s Inside a Spring Roll

Spring rolls are made with a variety of fresh vegetables and herbs all wrapped in rice paper. Some rolls may be filled with shrimp, chicken, pork or crab meat but the option are endless.

Choose vegetables that are fresh, crisp and colorful like lettuce, red cabbage, carrots, cucumber, sliced bell peppers, avocado, bean sprouts, and radish sprouts (my favorite).

Add fresh herbs like mint, basil, cilantro.

I like to add vermicelli rice noodles as a light filler.

Prepare Ingredients

Chop all the vegetables in long thin slices.

Spring roll ingredients

I really find using my slicer is the quickest and easiest way to prepare the vegetables especially making julienne carrots. Wearing a cut resistant glove is recommended when cutting vegetables for safety purposes. 

Making the Roll

Rice paper is very delicate once moistened. So be very gentle when working with it.

Prepare a pan the size of the rice paper with warm water. Dip the dry rice paper into the warm water bath until slightly softened.

Moisten rice paper

Gently remove rice paper from water bath and place on plate. Begin layering your ingredients to the center of the rice paper.

Add ingredients

Starting at the end closest to you lift the rice paper up and move toward center of ingredients. Lift left side of rice paper and move toward center of ingredients. Do the same with the right side.

Gently take the rice paper, roll away from you making sure ends are tucked in, to complete and close the roll.

Complete rolls

Peanut Sauce

Ingredients:

  • 1 cup dry roasted peanuts
  • 1/4 cup Apple Cider Vinegar
  • 3 Tablespoons granulated sugar

Finely chop peanuts and put into a small bowl. I like this, no, I love this hand chopper.! It’s the only one I use outside a knife. Add remaining ingredients and stir.  Taste test and add more sugar if needed.
