Jamaican Jerk Rice and Peas

Ingredients

  • 1 Tablespoon olive oil
  • 1 small yellow onion diced
  • 1/2 red bell pepper diced
  • 1 large garlic clove minced
  • 1 15-ounce can black beans rinsed and drained
  • 1 cup Jasmine rice
  • 1 1/2 cup chicken broth
  • 1 Tablespoon Jerk Seasoning
  • 1 Tablespoon butter

Jerk Seasoning

  • 1 Tablespoon onion powder
  • 1 Tablespoon garlic powder
  • 2 teaspoons cayenne pepper
  • 1 teaspoon ground allspice
  • 1/2 teaspoon Chile red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon dried thyme leaves
  • 1 Tablespoon dried parsley flakes

Instructions

Jerk Seasoning

  1. Just mix all ingredients together and store in a jar until ready to use. This recipe will make about 1/3 cup. If you’re not into making the Jerk Seasoning you can always buy it on-line here.

Jamaican Jerk Rice and Peas

  1. Prepare Rice

    In a medium sauce pan bring 1 cup of chicken broth and 1 Tablespoon butter to a boil. Stir in rice, add lid and reduce heat to low and allow to simmer for 15 minutes. After the 15 minutes remove the pan from heat and set aside.

  2. Prepare other ingredients

    In a fry pan add olive oil, diced red bell pepper and onion and sauté for 2 minutes. Then add the minced garlic and continue to sauté for one more minute. Add black beans, jerk seasoning and the cooked rice to the onion mixture and stir together. Slowly add 1/2 chicken broth and cook over medium heat until the broth has reduced or until you achieve desired consistency.
