Rinse cauliflower head under cool water and pat dry with a paper towel. Cut cauliflower in half. Set one half aside.
Cut cauliflower at base removing stalk. Begin making cuts at florets making bite sized pieces and set them aside. This half of the cauliflower will be served in the raw form.
Place the other 2 cups of panko bread crumbs in a bowl.
Take a piece of cauliflower by the base and dip in the egg mixture until fully coated except where you are holding it. Remove and slide over to the panko bowl.
