Believe me when I tell you this is the easiest and best breakfast casserole you will ever make!
This recipe is perfect for any morning you want breakfast but don’t want to spend a lot of time in the kitchen. Makes great for serving on holidays and weekends. The full recipe can serve anywhere from 8-12 people. This recipe can easily be cut in half for a smaller serving. Either way, you won’t regret making this dish.
Can this breakfast casserole be made ahead of time?
You betcha! Easily prepare this breakfast casserole the night before. Just place the ingredients into a casserole dish, place it in the refrigerator and the next morning pop it into the oven. Viola! Breakfast can be ready in about one hour.
Easy Breakfast Casserole Recipe
Ingredients
- 6 Tablespoons butter
- 1 (12 ounce bag) frozen Potatoes O’Brien
- 12 eggs
- 16 ounces diced or cubed ham
- 2 cups freshly grated sharp cheddar cheese
- 1 cup milk
- salt and pepper to taste
Please note: The pictures of this breakfast casserole is naturally deep yellow because I made this recipe using farm fresh eggs from our backyard chickens.
Instructions
Preheat oven to 350 degrees Fahrenheight.
Melt butter in a 9×9 casserole dish. If making half portion I like to use this 1-Qt 9″ casserole dish. Pour entire bag of frozen potatoes over melted butter.
In a large bowl mix together eggs, milk, ham and cheese. Then pour egg mixture over frozen potatoes. Gently pat down smooth, cover with aluminum foil and bake for 45 minutes. After baking remove foil and bake an additional 15 minutes or until center is set and edges are golden brown.
