A unique way to using up all those homegrown zucchini’s is by making this yummy cheesy zucchini bake casserole.
The normal size of a zucchini is usually six to eight inches long. Sometimes a zucchini can get very large if not picked from the garden in a timely manner. Having a large or overgrown zucchini can still be consumed. Matter of fact, an overgrown zucchini is perfect to use in this recipe. This recipe used 2 pounds of an overgrown zucchini and the remainder was used for eating raw as a snack for me and my dogs. Yes, the dogs love raw zucchini too!
Cheesy Zucchini Bake Casserole Recipe
This recipe reminds me of my scalloped potatoes recipe. Easily convert this recipe to a vegan or vegetarian dish by substituting ingredients to fit your preferences.
Ingredients:
- 2 pounds zucchini (a great way to use up an overside zucchini)
- 4 Tablespoons unsalted butter
- 1 large yellow onion
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 Tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1 cup freshly grated Gruyere cheese
- 1 cup freshly grated parmesan cheese
Instructions:
Slice Ingredients
Using a mandolin or this food processor slice zucchini and set aside. Next, slice onion as thin as possible and set aside. And lastly, mince garlic using this awesome garlic mincer (you can thank me later. LOL) and set aside.
Sauté Onions and Garlic
Place butter in a large skillet. Turn heat to medium and add onions. Cook and stir until onions soften. Then add minced garlic and continue cooking for about 1 more minute. Remove pan from heat. Add flour to mixture and stir to combine. Then stir in milk. Add Gruyere cheese and allow to rest.
Prepare Casserole Dish
Place half of the sliced zucchini into a 9×13 casserole dish. Pour half of the onion mixture on top and sprinkle with half of the parmesan cheese. Add the remainder of the sliced zucchini on top and cover with remainder of the onion mixture and parmesan cheese.
Bake
Place zucchini filled casserole dish in a 400 degree Fahrenheit preheated oven and bake for 30 minutes. Carefully remove from oven and allow to rest for 5 minutes. If the casserole dish has a watery look, gently tilt pan on one corner and spoon out any excess liquid. Serve warm and enjoy!
