Pep up a chicken breast with lemon pepper, lemon juice, grilled cheese and turn into a club sandwich topped with lettuce, tomato, bacon and onion.
This recipe was created and tweaked from a chicken sandwich I had been served for lunch at a local pub.
Even though this recipe is focused on using one chicken breast, because I was able to make two sandwiches with just one breast, feel free to adjust this recipe as needed. And if you want chicken to hang over your bun like a huge tenderloin sandwich then use one breast per person.
Lemon Pepper Chicken Club Sandwich Recipe
Ingredients:
- 1 skinless boneless chicken breast (1 chicken breast can make 2 sandwiches)
- lemon pepper seasoning
- 1 lemon
- 2-3 slices Swiss cheese
- 2 sesame seed hamburger buns
- butter
- 1 small red onion sliced (optional)
- lettuce leaves (optional)
- sliced tomato (optional)
- 8 cooked bacon slices (optional)
- condiments of choice (optional) mayonnaise or Dijon mustard
Directions:
Preheat oven to 400 degrees Fahrenheight.
Tenderize Meat:
Place chicken breast on a cutting board and pound meat using a mallet or meat tenderizer until chicken has flattened. Note: one chicken breast can make two sandwiches.
Season:
Cover a baking pan with foil and and spritz with non-stick cooking spray.
Sprinkle both sides of chicken with lemon pepper then place chicken on baking pan.
Using a reamer remove juice from half a lemon and drizzle on top of prepared chicken breast.
Bake:
Place chicken breast in preheated oven and bake for 20 minutes. Turn chicken over and continue baking for an additional 15 minutes or until internal temperature is 165 degrees Fahrenheight.
Remove from oven. Add cheese and place under broiler for about 1 minute or until cheese has melted.
Butter the insides of the buns and place under boiler buttered sides up until the butter has melted and the bread becomes slightly crusty on the edges. Remove chicken and buns from oven and build your sandwich.
Build Sandwich:
Cut chicken breast in half to make 2 chicken sandwiches. Place chicken breast on top of bottom bun topped with favorite condiment. Use mayonnaise or dijon mustard.
Build sandwich with additional flavors by adding optional toppings: lettuce, onion, bacon and tomato and then top with toasted sesame bun.
