Can a pizza that’s gluten free and low carb be tasty? Oh yeah, this pizza is incredible. Who would’ve thought! Matter of fact, I didn’t just come up with this recipe on my own. Well, I did create this recipe but I was inspired but two lovely gals that I have known for years.

First, I’d like to thank these gals for inspiring me to create this recipe. I was talking with a friend of mine, Carla, during the summer of 2020. Carla stated she was on a low carb diet and was going to make an almond flour pizza crust. She also had another recipe she was going to try for a crust free pizza using chicken, cheese and spices. The chicken crust recipe really caught my attention. It sounded very interesting to me and I was up for a challenge and willing to be creative.

Since the majority of my recipes are focused on “taste” and not so much “low carb” I got to thinking maybe I could use some low carb meals myself.

With that said, another friend of mine, Sherri, informed me that she too was looking for low-carb meals.

About 5 days later I put two and two together and came up with this awesome recipe that’s high protein, gluten free, extremely low carb (super low carb) and full of flavor.

Supplies used to make this recipe a success!

1) I highly recommend making pizza’s on a Emile Henry pizza stone because the quality of this stone is top notch. The stone is ceramic and has a glaze coating making it durable in high temperature ovens. Even though the stone is 14.5 inches I only make my pizza’s about 12 inches.

I cooked the chicken directly on this stone and had no issues with the chicken sticking.

2) Instead of using a huge pizza peel I use this awesome scraper. This scraper is actually a cake lifter but I use it for tons of other recipes besides cakes. This is the best multi-use kitchen gadget ever! For this recipe I use this scraper as a pizza peel.

Chicken Crust Pizza Recipe

Even though this recipe is all about the chicken crust I also include a recipe for an alfredo pizza sauce and ingredients I used for the topping.

Ingredients:

Crust

Alfredo Pizza Sauce (optional)

  • 3/4 cup heavy whipping cream
  • 1 Tablespoon butter
  • 1 clove garlic minced
  • 1/4 teaspoon Salt-Free Dash Flavoring Garlic & Herb
  • 1 Tablespoon cream cheese
  • 1/4 cup freshly grated parmesan cheese
  • 2 Tablespoons freshly grated gruyere cheese

Topping (optional)

  • fresh spinach
  • red onion chopped
  • mozzarella cheese
  • cherry tomatoes sliced in halves

Directions:

Preheat oven 400 degrees Fahrenheit.

Pizza Crust

Combine ground chicken, spice and grated cheese in a large bowl and mix together thoroughly.

NOTE: I did grease the pizza stone with a very very thin layer of Crisco lard. Is that necessary? Probably not, but I have heard that other bloggers are baking their pizza on parchment paper. Maybe they aren’t using an Emile Henry Stone, I don’t know. But since I didn’t want to use parchment paper I thought I would take a precaution and lightly grease the stone.

Place chicken on pizza stone and using your fingers flatten out to about 1/4 inch thick.

Bake for 20 minutes in a preheated oven.

Note: If the chicken juices are present after baking for 20 minutes remove pan from oven and blot juices from chicken crust with a paper towel and return to oven continue baking for 10 more minutes or until edges of chicken are slightly browned.

While the pizza crust is baking make the alfredo sauce.

Alfredo Pizza Sauce

In a medium sauce pan heat heavy whipping cream, butter and cream cheese until all ingredients have melted.

Add minced garlic and Garlic & Herb seasoning and continue to cook for 1 minute. Remove from heat and stir in freshly grated parmesan and gruyere cheeses until mixture is smooth and set aside.

Load Up The Pizza

Remove pizza crust from oven and using the pizza peel slide it under the crust for safety measures making sure the crust did not stick to the pizza stone.

Spoon the alfredo pizza sauce over the top of the pizza avoiding 1/2 inch from the edges of the crust.

Add spinach, onion, cheese, tomatoes and top with additional cheese.

Bake

Bake pizza on the middle rack for 10 minutes or until cheese has melted. To get the cheese browned carefully move the pizza up a rack and broil until cheese has browned.
