Chicken Pot Pie

Here is a recipe for the easiest chicken pot pie that you will ever make. Just buy the ingredients and throw it together. Voila!
Simple ingredients include: a rotisserie chicken, frozen peas and carrots, celery, onion, butter, thyme, pepper, flour, whipping cream, chicken broth and a pre-made pie crust.
There’s Nothing Like A Homemade Chicken Pot Pie!
This is truly going to be the easiest chicken pot pie recipe you will every make. Plus it will be extremely good. Everything can be bought and all you have to do is put it together. Of course, you can make your own ingredients like homemade natural chicken broth but this rotisserie chicken pot pie recipe is going to be super simple.
If you would like to use more natural ingredients I will provide a few homemade tips at the end of the recipe.
Ingredients:
- 1 whole cooked rotisserie chicken (deboned)
- 1 cup frozen peas and carrots
- 3 Tablespoons salted butter
- 1 celery stock chopped
- 1 medium yellow onion chopped
- 1/2 teaspoon thyme (fresh or dried)
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 box refrigerated pie crusts (2 in a box)
- 3/4 cup heavy whipping cream
- 1 1/4 cups chicken broth
Directions:
- Preheat oven to 425 degrees Fahrenheit.
- In a large skillet melt butter. Sauté onion, celery, thyme and pepper for about 3-5 minutes. Add chicken meat.
- In a saucepan whisk together heavy whipping cream, chicken broth and flour. Cook over medium heat until mixture begins to thicken. Remove from heat and add to chicken mixture. Stir in peas and carrots.
- Let cool to 15-20 minutes.
- Prepare 9-inch deep dish pie plate with one pie crust. Spoon cooled chicken mixture into the pie crust. Top with second pie crust. Seal edges and cut several slits in the top pie crust to allow steam to escape.
- Place pie plate on a baking sheet. Bake for 30 minutes or until top crust is light brown.
- Cool for 15-30 minutes before serving.
Homemade Chicken Pot Pie Tips:
- Homemade chicken broth: After chicken deboned put carcass (all chicken bones) in a medium saucepan. Add water to cover bones and cook on low heat for at least 2 hours. This makes a fantastic all natural chicken broth. Or check out my chicken broth recipe.
- Use fresh carrots: Peel and cut up 2 carrots. Simmer on medium heat for 10 minutes and drain. Then use 1/2 cup frozen peas.
