Brussel Sprouts; The New Love Relationship

It seems as though everyone is raving over the “new popular” vegetable known as the brussel sprout.
Is it just me or do brussel sprouts have a bitter core? That bitterness just doesn’t act kindly with my tastebuds.
To be honest, brussel sprouts are not at the top of my favorite vegetables. Not until I put some thought into it and created this wonderful recipe.
Matter of fact, this recipe takes brussel sprouts to a brand new level!
What makes this recipe so good?
Fresh brussel sprouts, fried bacon with drippings, garlic, butter, heavy whipping cream, flour for thickening, a little salt and pepper and three cheeses; grana padano, parmesan and gruyere is what makes this dish so good! My mouth is watering just listing the ingredients! Yum Yum!

After trying this recipe you may want to start growing your own heirloom brussel sprouts seeds.
If you have never grown the stalky sprouts, I highly recommend it! It really is a “cute” vegetable. The sprouts grow on about a 20″ stalk and look like tiny little cabbages all over! How cute is that!!
Creamy Brussel Spouts Recipe
Ingredients:
- 1 pound garden fresh brussel sprouts (not frozen)
- 4 pieces of bacon strips
- 1-2 Tablespoon bacon drippings
- 2 cloves garlic chopped or minced
- 1 Tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper (freshly ground)
- 1 cup heavy whipping cream
- 1/2 Tablespoon all-purpose flour
- 1/4 cup each freshly grated cheese; Grana Padano, Parmesan and Gruyere
Instructions:
Cook bacon on stovetop on medium heat until crispy. Here I used my cast iron pan. And to keep the bacon from curling I like using a press like this bacon press.
Once bacon is crispy remove from pan and blot with paper towel to remove excess grease. Set aside and reserve about 1-2 Tablespoons of bacon drippings for adding flavor later.
Place sprouts in a colander and rinse under cool water. Shake off excess water. Cut bottoms off sprouts and cut the sprout in thirds.
In a large skillet melt butter and add bacon drippings. Add brussel sprouts, season with 1/2 teaspoon salt and freshly cracked pepper and cook over medium heat for 3-5 minutes. Stir occasionally to coat all sprouts with butter and bacon drippings.
As you cook the brussel sprouts their true colors will begin to show and turn a beautiful deep green!
Add garlic to pan and cook for about 2 minutes. Take care to not burn garlic.
Whisk together heavy whipping cream and flour and add to pan. Turn heat down and simmer for 3-5 minutes or until brussel sprouts are tender.
Add cheeses to pan and stir constantly until cheese has melted. Serve immediately and enjoy!
