Now that you have a Kombucha SCOBY Hotel what do you do with all the extra SCOBY? Make SCOBY fruit chews!

Before jumping to the recipe on how to make Kombucha SCOBY Fruit Chews I want to explain a little about what prompted me to even tackle this project. I am sure every person brewing Kombucha can relate.

If you don’t brew Kombucha I hope you find this article interesting.

The only thing I have done with my extra SCOBY was place it in my garden and in the compost.

I never got any gratification by doing this and felt as though I was depriving myself and my family of something that could benefit our health.

The Eviction

One day as I was making my new batch of tea I decided to experiment with my freeloading SCOBY.

It was time to downsize and evict every single SCOBY in the hotel.

I placed the freeloaders in the Vitamix. It was rather scary. Was I making the right move? There were so many “what if’s” going through my head.

I closed my eyes as I was getting ready to flip the switch. I feared the SCOBY would start screaming! No, No, No!!!   I diverted my thinking and took the plunge.

To much of my surprise everything went perfect and I made the most delicious SCOBY Fruit Chews!  The End.

What is Kombucha?

Kombucha is a fermented green or black sweet tea that is considered a healthy tea.

It has been around for nearly 2000+ years. Although Kombucha has about 80 different names you may mostly hear it referred to as tea fungus, booch, or mushroom tea.

Kombucha is a very popular beverage and can be found in health food stores and even some of the local grocers may have it on hand. 

It is becoming ever so popular that some people brew Kombucha right in their own home.

This is my home brew Kombucha in the big jar with the SCOBY floating on top surrounded by my second ferment bottles.

How I Brew Kombucha

About every ten days I remove all the tea in the jar except for about two cups and put it in flip top bottles with 1/4 cup flavoring like blueberry puree and set aside.

I then make a new batch of sweet tea and add it to the jar. Inside the jar is the mother SCOBY along with the sweet tea.

After the new tea is added I put a cloth on the top and secure it with a rubber band.

I then place the jar on the counter in an area out of direct sunlight for about a week and leave it alone to ferment.

How A SCOBY Is Formed

During that week the mother SCOBY will form a new baby SCOBY on top. That is how the SCOBY multiplies.

The Kombucha tea that is now flavored in the bottles, I leave that on the counter for 3-5 days to ferment even more.

Why? Because this process will give the Kombucha fizz. A fizzy Kombucha is a good Kombucha.

While the bottles are on the counter fermenting they build up gases in the bottle and must be burped daily to avoid exploding.

What is SCOBY?

Let’s get back to the basics. What is SCOBY? You know how vinegar has a mother? Well, Kombucha has a mother called SCOBY (Symbiotic Culture of Bacteria and Yeast).

The SCOBY consumes the sugar from the sweet tea and gives off CO2 and nutrients thus making it good for your gut.

This here is a very healthy SCOBY. You can even see the bubbles which shows the gases being released. 

What is a Kombucha SCOBY Hotel?

Every time a batch of Kombucha is made a new baby SCOBY is born.

So after weeks of brewing Kombucha your SCOBY has grown so you place your excess SCOBY in a separate container and call it the Kombucha SCOBY hotel.

Maintaining a Kombucha SCOBY Hotel can be cumbersome and unrewarding. So, what do you do with all the extra SCOBY? You got it….

Make Kombucha SCOBY Fruit Chews!

Supplies:

  • Vitamix or Blender
  • Dehydrator
  • Parchment paper
  • Angled Spatula
  • Pizza cutter or scissors

Ingredients:

  • 1 pound SCOBY
  • 1 cup blended or fruit puree (I used 1/2 cup blended strawberry and 1/2 cup raspberry puree)
  • 1/4 cup organic sugar

Directions:

Make Flavoring

Blend fruit. Add sugar to fruit and set aside.

Blend SCOBY

Place SCOBY in blender on medium speed for about 3-4 minutes.

Add blended or fruit puree and continue to blend until combined.

Cut parchment paper to fit dehydrator drying racks.

Pour 1 cup of SCOBY fruit mixture onto parchment paper on rack.

Using an angled spatula spread the mixture out to all edges (about 1/4 inch thick).

Do steps 1 through 5 until all trays filled.

Dehydrate

Dehydrate at 90 degrees Fahrenheit for 24 – 36 hours or until mixture is dry and no longer sticky. This is the dehydrator I use for all my projects.

Remove from dehydrator and place parchment paper on cutting board.

Cut

Cut 1-2 inch wide strips using a pizza cutter or scissors across entire dried SCOBY fruit.

Store in an airtight container.
