Take Along O’Brien Potato Casserole
This cheesy O’Brien potato casserole is one of those recipes you throw all the ingredients together making a quick and easy side dish to take along to any gathering.
A great recipe to take to picnics, holiday gatherings or just make it for home. We enjoy eating this casserole with ham and ham sandwiches.
O’Brien Potato Casserole Recipe
Ingredients:
Casserole
- 28 ounce bag frozen Potatoes O’Brien thawed
- 16 ounce sour cream
- 1 (10.75 ounce) can cream of mushroom soup
- 2 cups cheddar cheese grated
- 5 Tablespoons butter melted
Topping
- 2 cups plain corn flake crumbles (DO NOT get frosted flakes)
- 1/4 cup butter melted
NOTE: For the topping I want to stress to please pay attention when buying the cornflakes and be sure to buy plain cornflakes and not the frosted corn flakes.

Directions:
Preheat oven to 350 degrees Fahrenheit.
In a large bowl combine sour cream, mushroom soup and melted butter.
Add Potatoes O’Brien to above mixture and stir well to combine. Then add cheese to mixture. Place combined ingredients is a 2 quart casserole dish.
For the topping: in a small bowl combine corn flake crumbles and melted butter until well combined. Spread evenly to top of potato mixture and bake for 1 hour.
Serve warm and enjoy!
