This recipe uses freshly shucked oysters, diced onions and minced garlic sautéed in butter, fresh baby spinach, heavy cream, freshly grated parmesan cheese, and topped with bread crumbs. The oysters are then baked to perfection on a bed of rock salt.
When is the best time to buy fresh oysters in the shell?
If you’re landlocked like myself, getting fresh oysters can be tricky. Keep in mind though that the best time to buying fresh oysters is during months that contain the letter “R”. This typically would include the months of September through April. Reason so, oysters usually spawn in warm water. Thus harvesting oysters when waters are warm can result in thin and watery oysters.
How long after oysters are harvested should they be eaten?
This is a great question. The handling and storage of oysters after being harvested is a very important process. Therefore, it it recommended to purchase oysters in the shell from a reputable business to ensure safe consumption. Oysters can maintain their freshness up to 14 days after being harvested. So, therefore, a good rule of thumb to avoiding any type of shell food illnesses is to stick with consuming or preparing fresh oysters 14 days or less after harvest.
Where to get fresh oysters
Fresh oysters can be sold in two different way: 1) In the shell ready to be shucked or 2) already shucked and sold in a plastic jar with fresh oyster juice. Fresh oysters for shucking can be found at a reputable meat and seafood market. If you don’t have access to a seafood market then you’ll need to use already shucked oysters. Fresh shucked oysters in the jar are usually found in the meat department of your local grocery store. During seasonal times, usually around October and November, I have seen shucked oysters at Walmart, Costco or Sam’s Club in the fresh seafood section. Oysters Rockefeller Recipe
- 12 – 13 live oysters in the shell rinsed and shucked
- 2 Tablespoons salted butter
- 1/2 medium yellow onion diced thinly
- 2 cloves garlic minced
- 5 ounces fresh baby spinach
- 1/2 cup heavy whipping cream
- 1/2 cup parmesan cheese freshly grated
- 2 Tablespoons bread crumbs
- 1/4 cup half & half milk (optional)
- Mortons Rock Salt for oyster bed
- Lemon slices for serving (optional)
Prepare Bed For Oysters Rockefeller
Generously line a half sheet baking pan with Mortons Ice Cream Rock Salt. Place unshucked oysters on top of rock salt and set aside .
Shucking Oysters
Be very careful when shucking oysters at home. Take safe measures to avoid cutting yourself. Wrap oyster shell with a heavy cloth exposing only the tip of the shell. We use these Japanese kitchen cloths when shucking oysters. For extra safety it would probably be a better practice to wear cut resistant gloves. Pressing down on the cloth wrapped ouster shell place the sharp tip of the oyster shucking knife into the tip of the oyster. Gently and slowly push the knife into the tip and then give the shucking knife a slightly twist and the oyster should pop open. Then gently run the knife just under the upper shell to loosen the oyster from the shell and discard top shell. Place shucked oyster on top of rock salt tray and continue shucking the rest of the oysters.
Prepare Spinach Filling
Melt butter in a 3 quart with lid removed over medium heat. Add diced onion and sauté for about 2-minutes or until onions become translucent. Add garlic and continue to sauté for another minute. Then add fresh baby spinach, heavy whipping cream and cover with lid allowing spinach to wilt for about 4-minutes. Remove spinach from heat and stir to combine ingredients. Add freshly grated parmesan cheese and cover with lid allowing cheese to melt. Remove lid and stir mixture. If the mixture is too thick to your liking then add half and half cream in small quantities to thin mixture to desired consistency.
Top Oysters with Spinach and Bread Crumbs
Top each shucked oyster with enough spinach mixture to cover entire oyster and then sprinkle each oyster with bread crumbs.
Bake Oysters Rockefeller
Bake oysters in a 375 degree Fahrenheit preheated oven uncovered for 15 minutes or until the cheese topping is golden brown. Serve warm and enjoy!
