Bring the dreamy tropical islands home with this creamy coconut Pina colada recipe served in a fresh pineapple.
Sipping a nice cold creamy Pina Colada straight out of a hollowed out pineapple will take you to the dreamy tropical islands! Well, not actually but….it does remind me of trips I’ve made to Hawaii and Mexico.
If you’ve never experienced a Pina Colada in a fresh cut pineapple it’s time you do!
What makes this Pina Colada so creamy?
There are actually two ingredients that make this pool side/ocean side Pina Colada creamy and that is Cream of Coconut and frozen coconut milk.
I use the Coco Lopez Cream of Coconut in which this ingredient gives the cocktail a nice hint of coconut flavor.
And for the coconut milk I like using the canned milk or cream usually found in the Asian section at the grocery store. Shake the can vigorously, take a church key to open the can and pour the milk into an ice tray. Place in freezer for a few hours until frozen and there you have frozen coconut milk ice cubes.
Creamy Coconut Pineapple Pina Colada Recipe
Ingredients
- 1 pineapple cored
- 6 ounce pineapple juice
- 1/2 cup cream of coconut (I use Coco Lopez)
- 1 cup unsweetened coconut milk ice cubes (I use canned coconut milk and place in ice cube trays)
- 2 cups ice cubes
- maraschino cherry (optional)
- Coconut Rum to taste (optional)
- Party Straws (optional)

Note: if you are using more than one pineapple to serve your Pina Colada cocktails you may need to make two batches. If you are serving the drinks in hurricane glasses then one batch should be fine. But you can go ahead and make as many batches as you want. Wink Wink!
Carefully slice the top off the pineapple. Using a pineapple corer, core the pineapple and set pineapple rings aside.
Place 3 pineapple rings, pineapple juice, cream of coconut, coconut milk ice cubes, Rum (if using) and ice cubes in a blender or Vita mix and blend until smooth.
Pour frozen drink in cored out pineapple’s, top with a maraschino cherry and sliced pineapple on the side, pop in a fancy party straw, kick back and enjoy!
