Raspberry Balsamic Vinaigrette Salad Dressing Recipe

This easy homemade recipe for raspberry balsamic vinaigrette salad dressing will liven up any salad! Uses fresh or frozen raspberries.
The nice thing about this recipe is you can use fresh or frozen raspberries. Other ingredients for this raspberry delight include sugar, balsamic vinegar, olive oil, honey, salt and some red wine vinegar.
Wake Up Your Salad
This raspberry balsamic vinaigrette salad dressing will definitely wake up a boring salad and tantalize your taste buds! Find flavors from sweetness, salty, bitter, tangy and savory all wrapped into one salad dressing.
What Type of Lettuce
Although you can use any salad/lettuce for this dressing I like using an organic prepackaged spring mix containing a mixture of baby lettuce and baby greens mainly because it’s easy and I like the variety of lettuce leaves.
If you’re not into prepackaged lettuce look for the following types of lettuce or maybe you’d like to add these greens to your garden. Many of the greens listed below can be grown indoors any time of the year:
- Radicchio has a bitter, spicy flavor and pairs nicely with this sweet salad dressing. It also adds a touch of red color to a green salad.
- Arugula adds a peppery flavor and is the perfect balance tossed simply with balsamic vinegar. These seeds can be grown indoors any time of year.
- Red Romaine Lettuce
- Green Romaine Lettuce
- Spinach Baby Greens, one of my favorites, can be grown indoors too and are perfect for adding to this salad.
- Mesclun Baby Greens. Mesclun, literally means “mixture”, is a perfect blend of five lettuce varieties with a range of leaf shapes, textures and colors. No need to pay premium price for mesclun baby greens when you can grow your own!

Salad Toppings
Salad toppings can be just as fun when pairing with this raspberry vinaigrette dressing. Be sure to set aside a few fresh raspberries to add as a topping.
Since this raspberry vinaigrette is semi-sweet you may wish to add some fresh fruits like strawberries, red grapes dried cranberries, plain or candied walnuts and how about some mandarin oranges and feta cheese. Yum Yum!
Recipe for Raspberry Balsamic Vinaigrette Salad Dressing
Ingredients:
- 1 1/2 cups fresh raspberries
- 1 Tablespoon granulated sugar
- 2/3 cups balsamic vinegar (this is the one I have)
- 1/4 cup olive oil
- 2 Tablespoon honey
- 1/2 teaspoon salt
- 2 Tablespoons Red Wine Vinegar
Directions:
Place raspberries and sugar in food processor and pulse about 5 times. Add balsamic vinegar, olive oil, honey, salt and red wine vinegar to sweetened raspberry mixture. Combine in food processor until mixture is smooth. Viola you have just made the best raspberry balsamic vinaigrette! How easy was that! Serve and enjoy!
Conveniently store the salad dressing in a salad dressing shaker in the refrigerator.
